Directions:

Heat oil in a large stock pot over medium heat. Add onions, carrots and celery, sauté for 3 minutes. Add beef, tomato paste, salt and pepper, cook for 7 minutes. Mix in broth, cream and bay leaf, bring to a boil. Add tomatoes and again bring to a boil, then cover and reduce to a simmer, stirring occasionally and cook for 20-25 minutes. Meanwhile, cook pasta according to package instructions. Mix drained pasta with sauce until evenly coated, then drizzle pasta with remaining oil and basil. Serves 4-6.

BOLOGNESE SAUCE

Ingredients:

  • 3 tbsp Cento Imported Extra Virgin Olive Oil, plus extra for drizzling
  • 1 cup White Onion, diced
  • 1/4 cup Carrots, diced
  • 1/4 cup Celery Stalks, diced
  • 1 1/2 lb Ground Beef
  • 1/4 cup Cento Double Concentrated Tomato Paste Tube
  • 1 1/2 cups Cento All Purpose Chicken Broth

  • 1/2 cup Heavy Cream
  • 1 Cento Bay Leaves
  • 1 can Cento Certified San Marzano Tomatoes (28 oz), hand crushed
  • 1 can Cento All Purpose Crushed Tomatoes (28 oz)
  • 1 lb Maurizio Rigatoni
  • 1/4 cup Fresh Basil Leaves, chopped
  • Cento Fine Sicilian Sea Salt, to taste
  • Cento Ground Black Pepper, to taste

I love anchovies, enjoy them in many dishes and wish there were better bulk money-saving offerings packaged in re-closable glass jars, or better yet, salted and frozen, which I have never seen in this country.

Sadly, the jar anchovies aren''t the best, in my experience. There is a slight price savings but also a trade-off in terms of texture being less firm and fillets less likely to be whole and similarly sized.

Cento Anchovies (which come from Morocco) are a very nice value. That are firm, fresh and flavorful. Not the best I have ever tasted, but they are very good and very affordable.

I much prefer the anchovies-only flatpack to the rolled up anchovies with the capers inside. It''s not that I don''t like capers, but they are picked and the acidic solution breaks down the anchovie flesh, resulting in a mushier product.

And I am thankful that Cento continues to package them in pure olive oil rather than using unhealthy Polyunsaturated Fats (PUFAS) to save on cost. It''s not extra virgin oil, granted, but it''s still a healthy enough fat that there is no need to drain the anchovies before using.

This is the saltiest thing I ever tried to eat. My wife is from the Philippines where they eat a lot of salt fish and she couldn''t even eat it. All you taste is salt. Don''t eat this if you have above normal blood pressure, you may not survive.
